Szechuan, also known as Sichuan, is a style of Chinese cuisine that is spicy, slick and especially zesty, originating from Sichuan province in southwestern China. Szechuan pepper has a unique aroma and flavour and is nor hot or overpowering. Instead, it has slight lemony overtones and creates a tingly numbness in the mouth that sets the stage for hot spices.
